I have found that I am no fan of instant potatoes, either.  I have not
tried doing up my own shredded potatoes (good idea, Paddler!) because I
discovered that they are available in bulk almost anywhere.

We used a lot of "dehydrated hash browns" on both of our thru-hikes.
Discovered that they are available in (gal?) cartons in almost every
restaurant-supply place that we tried.  Seems that almost all b'fast places
now just put these on to soak the night before and grill them for
hash-browns the next morning <g>. Taste great, lotsa "chew", and the $
ain't too shabby, either!
