I think one of the other wild stabs was pretty close to the mark. If you are
in the habit of urinating at a certain time--before the 10 o'clock news
maybe--that's when you'll do it when hiking. It just seems much later 'cause
you went to bed earlier. Same thing at 5 or 6 AM.
All the other reasons given contribute of course.
The down time between evening meal and bedtime is much shorter so your natural
rhythm is upset.
