This probably means that the jerky/sausage includes cartilage, with
glocosamine and kelp simply added to aid as a binder agent. 

BTW, many "animal" chows make for very good hiker food. Dog biscuits
are excellent hard tack cookied. Sunflower seeds for birds are so much
cheaper than the stuff at the grocers - and the very same quality.
