how funny - just yesterday I had some re-hydrated beans for lunch from my
leftover hiking food.
I had dried canned kidney beans - don't think I even cooked them, just
rinsed from the can & dried. For lunch I added some extra kidney beans to
my red beans & rice I also had cooked & dried. hmmmm goood! they
rehydrated in just a few mins in a small tupperware bowl w/ lid using the
hot water dispenser from the coffee machine @ work.
( of course, i also added dried stewed tomatoes, hamburger, green peppers
and a packet of wendy's chili hot sauce ) YUM.

After using a food dryer 20 years I finally dried some cooked pinto
beans. I guess since I grew up watching dried pinto's cooking for hours
I just assumed that if you dried the cooked beans they would go back to
the same dried state that they were to begin with. So a few years ago I
discovered that cooked and then dried pinto's reconstitute in about 5
minutes in boiling water. Usually I just dry canned Lucks brand pinto
beans now days.
