Often outfitters will rent gear and give you a discount on future purchases. 
If you really don't know what you want and don't have friends whose packs you 
can 'borrow' to experiment with, you may consider renting a few packs for 
weekend hikes. This will give you a better idea of what "works" for you and 
what doesn't work well. 

On a side note, there is some good basic info on the GORP site about 
backpacks and fit.
