The best succinct info I've seen on how to pack a bear cannister with the 
most possible food is Tom Reynolds' article called "The Care and Feeding of Your 
Bear Cannister." The link is here:

Scroll down to the section on cannisters and you can download it there. I've 
handed that out in talking to scout troops and backpacking friends who are new 
to using a bear can and it's very helpful.
