This was back in March, but I've been reading the archives (planning to
thru-hike in 2001) and I didn't see a reply to this one.

Infused olive oil is very tasty and doesn't go rancid so long as it is
cold pressed. Tastes range from savory to HOT. Squeeze on bread, in
soup, rice, anything but dessert.

I infuse my own, garlic is a particular favorite - so be forewarned.
