BlankThis an excellent entree for the meat eaters & vegetarians (all =
types).

Addictive Sweet Potato Burritos

Once you've had one - you'll want another. The recipe is a little =
different from most burrito recipes but I've had many, many requests for =
it. These may be made ahead of time and individually frozen (wrapped in =
foil), then heated. Or, make @ camp & toss in the embers. For an =
interesting variation try deep frying these tasty burritos.

3 teaspoons vegetable oil=20
1 onion, chopped=20
4 cloves garlic, minced=20
6 cups kidney beans, cooked & mashed=20
2 cups water=20
3 tablespoons chili powder=20
2 teaspoons ground cumin
4 teaspoons prepared mustard=20
1 pinch cayenne pepper, or to taste=20
3 tablespoons soy sauce=20
4 cups cooked and mashed sweet potatoes=20
12 (10 inch) flour tortillas=20
8 ounces shredded Cheddar cheese (Real or Soy)
Garnishes: Sour cream (Real or Soy), chopped green onions, black olives, =
&/or salsa.

@ Home:
1) Dehydrate the beans & sweet potatoes (& the onions) separately. Store =
in separate ziplock bags.
2) Bag the dry spices together.

@ Camp:
1) Rehydrate the dried ingredients separately in hot water for 10-20 =
min.
2) Heat oil in a medium skillet. Saut=E9 onion and garlic until soft. =
Add the beans and stir well.=20
3) Gradually stir in the water and heat until warm. Stir in the chili =
powder, cumin, mustard, cayenne pepper and soy sauce. Stir in mashed =
potatoes & heat thru.
4) Warm the tortillas near the fire.
5) Divide bean-sweet potato mixture evenly between the warm flour =
tortillas. Top with cheese. Fold up tortillas burrito style. Eat as is =
with the garnishes Or bake (350 for 12 min) Or doublewrap in heavy duty =
foil & bake in embers. Don't let the tortillas burn. Don't forget the =
garnishes.
