Note: Some people make stews and soup at home and then dry them in
trays. I dry components and assemble meals on the trail. Either way
would probably do for this recipe, but the adaptation comments I make
are for my technique.
1 can garbanzo beans (chick peas), dried
dried onions
garlic powder
2 T. cooking oil (optional)
2 cups cauliflower flowerets, dried
1 1/2 t. curry powder
3/4 t. ginger
1/2 t. salt
1/2 t. ground cumin
1/4 t. dry mustard
1 14-oz. can diced tomatoes, drained and dried [I might add a bouillion
cube to make up for the lost juice]
sprinkle of dried cilantro
Makes four conventional servings or two hiker servings. Throw in an
appropriate amount on boiling water to reconstitute.
The recipe suggests serving it with pita bread. That's good, but I think
it would also be good with rice or couscous.
