It's not exactly something you can process with a dehydrator, but this
recipe will make you look forward to a summer picnic.

Sweet Potato Salad

2 cups cooked, cubed sweet potatoes
1/2 cup chopped green pepper
1/2 cup chopped celery
3 sliced green onions
2 Tbls. chopped walnuts
2 Tbls. low-fat mayonnaise
1/4 cup non-fat yogurt
1/4 tsp. ginger
Zest & juice of one whole lemon
