You really can get by with one pot for the two of you (unless one eats
meat and the other doesn't).  It's not that hard to wait for the next
course. (On weekend trips we eat soup, followed by Liptons, followed by
hot chocolate - it makes  a nice leisurely dinner.)  What is the pillow
case for?  If to stuff clothes to make a pillow, you can stuff them in
the plastic bag that holds your clothes, or in your sleeping bag or tent
stuff sack.
No sleeping pad?  You may want a wool sweater or fleece jacket unless
you are going south - in the Shenandoahs it can still be cool this time
of year, if it rains. And besides, they make a good pillow. 

Drop the candles - it is dark at about 8:30 or 8:45 right now - after a
long day hiking, you'll be ready for bed.  

2 pairs of socks each would be good - you only show one pair between
you.  A bandana makes a good camp towel.

What about rope to hang your food - are you hiking in bear or porcupine
country?  Makes a good clothes line to hang your sweaty clothes at the
end of the day.
