OK here the real story. I was a Yankee that went to East Tennessee
State University. There I learned about Hominy and grits. Hominy is
dried corn that has been soaked in lye, washed and cooked. I would
rather eat anything other than hominy. Horrible stuff. If one
dries hominy and grind it you get grits. Wonderful stuff. The only
way to eat it is with a little salt and butter. I like it a lot
better than oatmeal. My wife, who is southern, likes cheese grits.
If you let grits cool they will congeal. They then can be cut up
into some pieces and fried in bacon grease. Great for the heart.
