Jiffy Corn Bread mix in a box is one of those things you keep on hand in the
pantry - a southern 'staple' if you will. If you'd like to jazz it up a
bit, mix one box JCB with one can creamed corn and one beaten egg. That's
it, just those 3 ingredients for the basic recipe. If you like cheese, a
half cup or so of shredded cheddar cheese added to the batter is a nice
addition. Bake at 400 for 40-45 minutes until golden brown and set in the
middle. This makes a very moist, rich, delicious cornbread. I bake it in a
greased 8x8 pan - easier to cut into blocks and get out with a spatula,
although you can bake it in a round casserole as well. I haven't tried this
in muffin tins - suspect it's too moist to hold together well as a muffin.
