Hominy appeared regularly at the table when I was a kid. Mom fried them in the same iron skillet she'd used to fry the pork chops, so that the hominy had little bits of the pork drippings clinging to it. Don't know why, but I don't think I've ever fixed them more than a couple of times.
Although I grew up in southern Illinois in a house of less than 900 sq. ft. with no washer or dryer, we had an African American maid for a while: Nell took care of me and the house while my mother was very, very sick while pregnant with my brother. Nell stayed on for a while after he was born and taught my mother a lot of really southern cooking.
