Skeeter asks about the shelf life of nuts and whether he should freeze them.

Yes!  All kinds of nuts contain oil and will go rancid in a few months if 
not frozen or kept cold.  I found that pecans that I thought would keep in 
my refrigerator didn't get rancid, but they contained enough moisture that 
they molded.  So, freeze any nuts you plan to keep around for use for a year 
or so.  3 month supply probably would be ok not frozen.  Longer than that I 
wouldn't chance.
