I prefer lots of smaller ziplock bags to one big one.  That way, you can arrange them and fiddle with them until you get a good fit.  With the really big ones, everything is in one lump, so it's not so versatile.  Also, like Chainsaw says, they're good for organizing.  

In the ziplock bags that hold paper products, I include a silica gel pack, the kind that comes in show boxes.  That keeps your toilet paper and your journal and your maps from being a continual soggy mess.  I know, I know.  They weigh part of an ounce each, but that extra little bit of weight is worth it to me.
