Well, all the sushi bars in the south roll the fish in grits and tobacco 
leaves...and, with the global warming that is so prevalent there, the fish is 
nearly cooked by the time you eat it anyway. So, it's not even considered 
sushi. (There are decent Japanese restaurants in LOTS of the trail towns. Are 
you talking about 'taking' some on the trail with you?)
