If you dehydrate and vacuum seal something, how do you determine its shelf 
life?  Obviously I don't want to spend money and time on food that will turn 
out to be inedible in a few months.  I've never had to prepare meals this 
far in advance before, I'm just wondering if there's a rule of thumb or 
something.
