Try this - it might help answer some of your questions.

Try the AT data book and the ALDHA Companion (http://www.aldha.org) for a 
list of towns. The other thing that might help is go to www.trailjournals.com 
and some of the AT hikers list their maildrop lists.  Yours might be 
different because most of those are going northbound, but should give you a 
good idea. 

After you have your list, you can post it to this list for comments and 
suggestions  - just be prepared that you will get them :)
