While I might agree 'possum is a tad grease, it makes great barbeque.

However, 'coon is down right finger licking fried.

As for squirrel, you sound like someone who might thing blue crabs are too
hard to pick, or scare away from lobster.  If a little picking at the table
gets you down, that food of the Gods Brunswick Stew is the ticket for
squirrel -- as you should cook the squirrel & pick the bones before adding
the veggies.

As for quail, I'll admit that I am a tad spoiled.  We just use the nice dark
breast.  My favorite is  quail breast grilled w/ butter and basil over
linguini, all of which is topped with alfredo sauce.
