IMBA (International Mountain Biking Association) has very detailed 
information online about trail building. They have it in both an online 
format and , for much of it, you can download the info in a PDF file.

Their info is really helpful if the trail you are going to be working on is 
multi-purpose because there are some additional factors that should be taken 
into consideration - ever unexpectedly hit a water bar on a bike? I did and 
have the pictures to prove it!
