Well, there's Jim & Ginny (Spirit Walker), still going strong.  

I believe Mike Henderson met his wife ("Little Debbie") on the trail, but 
they split up a few years ago. Dunno about any others...I get the impression 
this is one of the (many) single male fantasies about trail life.
