No, you are missing the point. The iodine would oxidize/bleach the vitamins 
in the solution - making the combination worthless. If you really wanted 
to, you could add the vitamin powder to the water _after_ the iodine had 
done it's bit, but again, there would be degradation of the vitamin potency 
by the iodine left over. The more efficient way is to simply take a vitamin 
tab daily, assuming the diet is vitamin deficient.

Our body does store some vitamins, hence there are risks for 
hypervitaminosis in some cases (Vit A for instance). Many vitamins are fat 
soluble, and not terribly water soluble (Vit E for instance). Some minerals 
that hikers need to supplement are simply not great in solution (calcium 
for instance). Your idea is nice, but it wouldn't work for several reasons.
