I love to cook, and in fact I prepare almost all of my family's meals.
However, I hate messing around with recipes when I'm hiking. I like to mix
and match quick-boil ingredients from various commercially available
prepared foods. There're all kinds of great things out there from Thai to
Italian. My local nutty-crunchy store has great freeze-dried stuff from
JustTomatoes, and some great quick-boil pre-mixes like Lentil Curry. I even
recently found freeze-dried Tofu (dear to my vegetarian heart).

On my first (unfinished) thru-hike I sent ahead a lot of food, and ended up
with a rather homogeneous fare, and lots of leftover TVP :-(. On my upcoming
trip I will send some of the more exotic things like Taste of Thai and
supplement them with locally purchased stuff. I've followed this formula on
all the multi-day excursions I've had, and I've never had a dull meal.

BTW, to Mr. Lee I Joe: I love the Orange Delight recipe. It's a keeper.
