One of the things I like about the newbies is the number of questions and 
the quest for knowledge that is possibly unknowable. You might want to 
start a new thread with each question, as I've done with the water question.

Water is only 8 pounds per gallon, less if you dehydrate it. I think kahley 
can give you instructions on drying it along with pasta sauce.

You learn how much water to carry by doing it. You also learn how much to 
have the kids carry - it can be an easy temptation to overload kids. Think 
in terms of a percentage of their weight, and have kids carry their 
"special" weight items. I usually carry enough water to get a bit beyond 
the next water supply. That can vary, particularly if there is drought or 
other problem. Usually, I carry at max 2 liters in a Platypus bag. Others 
prefer soda bottles, Nalgene, and other options.

Then we can get into the discussion of how much Gatorade (T), Conquest, 
Koolaid, Tang or other powdered sugar/electrolyte mixes to bring.

But first, I'd suggest a little day hike with the kids and a couple of 2 
liter bottles of water (along with your first aid kit) for an afternoon 
jaunt. That will answer many questions.
