I use a closed-cell foam ensolite pad. A cheap one can make 6-8 cozies
for $10. 

Cut a foam strip the hight of your pot and long enough to wrap around the pot. 
Cut a bottom to fit either inside the foam sides, or on top - your choice. Use
contact cement to glue the two together. Be careful when you touch the two
pieces of foam together when the contact cement is ready - they will NOT come
apart again once glued - the foam will rip first.

We make these in Scouts for the new boys every year. Not only do they make for
great simmering covers for the pot, but you can hold the hot pot without Burning
yourself, and your feed stays hot as long as you want!
