Grits *do* have nutritional value, they just don't have a whole lot of
calories by themselves. So you have to add a lot of stuff like butter,
cheese, baco-bits, eggs, etc to help them measure up to a hiker's
breakfast. No problem.
BTW, IIRC polenta is made from corn meal, which is whole corn ground up.
Grits are made from hominy, which is corn with the hull removed, and then
ground up.
Grits and polenta are made the same way -- add a thin stream of grits/corn
meal to rapidly boiling water and stir until it thickens completely. They
have a very similar texture and flavor.
